FITZ Old Fitzgerald Bourbon Scotch Ale
Ingredients
6lbs Light DME
1lb Crystal Malt (crushed)
1oz Kent Goldings (pellet)
Wyeast Scottish Ale Smack Pack
1 tablet Whirlfloc
1 tsp gypsum
4oz toasted oak chips soaked in bourbon for several months
Heat 3 gallons of water and add 1 tsp gypsum
Steep grain while water heats; remove grain bag at 140
Add DME when water starts boiling
When water boils again, add hops
Boil 60 minutes
With 15 minutes remaining, add Whirlfloc tablet
Ferment for 2 weeks; Rack to secondary.
Separate wood chips from bourbon, add chips to secondary.
Discard bourbon.
